Market CEO Didier Souillat had already promised that he would be launched before “the first snow” here, so he must be sure that winter is still in three weeks.

The 40,000 square foot Time Out Market will feature 16 dining spaces for some of the city’s most acclaimed chefs: among them, the Montreal Plaza Charles-Antoine Crête and Cheryl Johnson; Normand Laprise de Toqué !; and Claude Pelletier and Mélanie Blouin from the Hunting and Fishing Club.

The Time Out Market concept was born out of the London-based Time Out media empire. The first market was launched in Lisbon in 2014, and new ones have since sprung up in Miami, Boston and New York. Chicago is set to open shortly, and markets in London, Prague and Dubai are in the works.
